Description
Transform tender chicken thighs into a restaurant-worthy dish with rich, herb-infused butter. This 30-minute recipe delivers golden, flavorful meat and crispy skin that’s perfect for any occasion, from weeknight dinners to weekend gatherings.
Ingredients
1.5 lbs Boneless, Skin-On Chicken Thighs
1/2 cup unsalted butter (1 stick)
2 cloves garlic, minced
1 tbsp fresh thyme
1 tbsp fresh rosemary, chopped
1 tbsp fresh parsley, chopped
1 tsp salt
1 tsp black pepper
1 tbsp olive oil
Instructions
Preheat oven to 375°F (190°C)
Pat chicken thighs dry with paper towels and season both sides with salt and black pepper
Heat olive oil in an oven-safe skillet over medium-high heat until shimmering
Sear chicken thighs for 6-8 minutes per side, until golden brown
Reduce heat to medium, add butter, garlic, thyme, rosemary, and parsley to the skillet
Simmer herb butter while scraping browned bits from the pan with a wooden spoon
Place seared thighs into the herb butter mixture and baste for 2-3 minutes
Transfer skillet to the oven and bake for 15-20 minutes, until chicken is cooked through
Remove and serve warm with pan sauce spooned over the top
Notes
For bone-in chicken thighs, add 5-10 minutes to baking time
Replace olive oil with extra-virgin olive oil for deeper flavor
Use vegetable broth instead of water for extra richness if deglazing
Store leftover sauce in the fridge and reheat with a splash of liquid when serving
