Ingredients
4 boneless, skinless chicken breasts
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped (oil-packed, drained)
3 cloves garlic, minced
1/2 cup grated Parmesan
1 cup fresh spinach
2 tbsp unsalted butter
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
1 tbsp fresh basil, chopped (or 1 tsp dried)
Instructions
Preheat oven to 375°F (190°C)
Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken breasts for 3-4 minutes per side until golden. Remove and set aside
In the same skillet, melt butter, then add garlic and sauté 1 minute
Stir in heavy cream, sun-dried tomatoes, red pepper flakes (if using), salt, and pepper. Simmer 2-3 minutes
Return chicken to skillet, spoon sauce over, and top with Parmesan and spinach
Bake 20-25 minutes until bubbly and golden
Notes
Chicken thighs can be substituted for richer flavor
Half-and-half may be used in place of heavy cream, though texture will be less dense
Cherry tomatoes (roasted 20 minutes at 400°F) may replace sun-dried tomatoes
Cover and refrigerate for 3-4 days
