A hearty Tex-Mex casserole combining seasoned ground beef, fluffy rice, vibrant veggies, and smoky enchilada sauce, all topped with melty cheese in a single pan.
Ingredients
1.5 lbs ground beef (or turkey)
1.5 cups uncooked long-grain white rice
1 diced onion
1 cup canned corn
1 can black beans (rinsed)
1 can diced tomatoes with green chiles (15 oz)
10 oz red enchilada sauce
2 cups beef broth
2 tsp ground cumin
2 tsp chili powder
1 tsp garlic powder
1 tsp smoked paprika
3 cloves garlic (minced)
2 cups shredded Mexican blend cheese
Fresh cilantro (optional)
Lime wedges (optional)
Avocado slices (optional)
Instructions
Preheat oven to 375°F (190°C)
Brown ground beef (or turkey) in a skillet and drain fat
Sauté onion and garlic until fragrant
Add rice, corn, black beans, tomatoes, and drained beef back to pan
Mix in enchilada sauce, beef broth, and spices
Stir until heated through
Transfer to a 9×13-inch baking dish
Sprinkle cheese over top
Bake for 25-30 minutes until bubbly and golden
Let rest 10 minutes before serving
Notes
Substitute ground turkey for ground beef
Use brown rice for a healthier twist
Pre-cook rice separately if desired
Optional toppings: cilantro, avocado, lime
