Ingredients
6 boneless, skinless chicken thighs (about 1.5 lbs)
1 cup finely grated Parmesan cheese (freshly grated)
1 cup Panko breadcrumbs
2 large eggs
2 cloves minced garlic
1 tsp dried oregano
1 tsp dried basil
½ tsp paprika
½ tsp black pepper
¼ tsp salt
3 tbsp olive oil
Instructions
Preheat oven to 400°F (200°C)
In a shallow dish, mix Parmesan cheese, Panko breadcrumbs, garlic, oregano, basil, paprika, pepper, and salt
Whisk the eggs in another shallow dish
Dip each chicken thigh into the egg mixture, then coat thoroughly in the Parmesan-breadcrumb mixture, pressing firmly to adhere
Place chicken thighs on a baking sheet lined with parchment paper
Drizzle olive oil over both sides of the chicken
Bake for 25–30 minutes, or until golden brown and cooked through
