Ingredients
1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
1.5 cups uncooked pearl couscous
2 cups fresh spinach, chopped
1 medium onion, diced
3 garlic cloves, minced
3 tbsp olive oil
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp tomato paste
1 (28-oz) can crushed tomatoes (no salt added)
1/4 cup chopped fresh parsley
Juice of 1 lemon
Instructions
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, 5-7 minutes. Remove chicken to a plate.
Add remaining 1 tbsp olive oil to the skillet. Sauté onion and garlic until softened, 3-4 minutes. Stir in cumin, paprika, salt, and pepper to create a fragrant paste.
Add tomato paste and cook for 1 minute. Pour in crushed tomatoes and bring to a simmer.
Add cooked chicken back to the skillet. Stir in spinach and couscous, then pour in 2 cups water (just to cover). Season with lemon juice.
Cover and reduce heat to medium-low. Simmer for 15-20 minutes until couscous is tender. Toss with fresh parsley before serving.
Notes
Substitute chicken thighs for a different texture
