Description

Tender chicken thighs glazed with a glossy sweet chili sauce, balanced with lime, garlic, and ginger. Quick to prepare and perfect for weeknight meals or casual gatherings.


Ingredients

4 bone-in chicken thighs (skin-on or skinless)
3 tablespoons sweet chili sauce
1 tablespoon soy sauce
1 tablespoon honey
1 lime (juiced)
1 clove garlic (minced)
1 teaspoon grated ginger
1 tablespoon cornstarch (mixed with 2 tablespoons water for sauce)
1 teaspoon vegetable oil
Salt and pepper


Instructions

Preheat oven to 400°F (200°C)
Pat chicken thighs dry and season with salt and pepper
In a bowl, mix sweet chili sauce, soy sauce, honey, lime juice, garlic, and ginger
Heat oil in an oven-safe skillet or baking dish, then brown chicken thighs for 3-4 minutes per side
Pour sauce over chicken, transfer to oven, and bake for 35-40 minutes
During last 5 minutes, mix cornstarch and water, add to skillet, and baste chicken

Notes

Use skinless thighs if preferred (adjust cooking time 5-8 minutes less)
Toss cooked chicken with steamed rice or noodles for a complete meal
Store leftovers refrigerated in an airtight container for up to 3 days
