Ingredients
4 boneless, skinless chicken breasts
1 large bell pepper (any color)
1 cup cherry tomatoes
eps
2 teaspoons Cajun seasoning
1 tablespoon olive oil
1 clove garlic, minced
1 teaspoon dried thyme
Salt and black pepper to taste
Instructions
Preheat oven to 400°F (200°C)
Clean and halve cherry tomatoes
Slice bell pepper into strips
Pat chicken dry and season both sides with Cajun seasoning, garlic, thyme, salt, and pepper
Heat olive oil in a large oven-safe skillet until shimmering
Brown chicken skin-side down for 2-3 minutes
Add bell pepper strips and cherry tomatoes to the skillet
Transfer to oven and bake 20-25 minutes, until chicken reaches 165°F
Notes
Use 4 boneless chicken thighs instead of breasts for firmer texture
Adjust spice level by adding cayenne pepper
Add zucchini or yellow squash for extra vegetables
