Ingredients
20 oz cheese tortellini (fresh or frozen)
2 cups cherry tomatoes, halved
2 cups fresh baby spinach
1.5 cups shredded mozzarella
1/2 cup grated Parmesan (or Asiago)
4 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp red pepper flakes (adjust to taste)
2 tbsp olive oil
Salt and pepper to taste
Optional: Fresh basil, toasted breadcrumbs, or drizzled balsamic glaze
Instructions
Heat olive oil in a large skillet over medium heat.
Sauté garlic for 1-2 minutes until fragrant.
Add cherry tomatoes and cook 5-7 minutes until softened.
Stir in baby spinach and cook until wilted.
Add mozzarella, Parmesan, Italian seasoning, garlic powder, and red pepper flakes.
Mix until cheese is melted and sauce is creamy.
Toss in tortellini and cook for 4-7 minutes until heated through.
Adjust seasoning and serve with optional toppings.
Notes
Use light-colored skillet-safe utensils to avoid scratching nonstick surfaces.
For extra protein, add cubed chicken or spinach tortellini.
