Ingredients
6 bone-in, skin-on chicken thighs
3 tbsp olive oil
4 garlic cloves, minced (or 1 tsp garlic powder)
2 tbsp fresh rosemary, chopped (or 1 tbsp dried rosemary)
1 lemon, zested and juiced
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
Instructions
Preheat oven to 400°F (200°C)
Pat chicken thighs dry and place in a large bowl
In a small bowl, combine olive oil, garlic, rosemary, lemon zest, lemon juice, salt, pepper, and paprika
Pour the marinade over the chicken thighs and mix well to coat
Transfer chicken thighs to a baking sheet lined with parchment paper
Bake for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C). Flip halfway through for even browning
Let rest for 5-10 minutes before serving
Notes
Use boneless thighs if preferred, but reduce cooking time by 10-15 minutes
Add a sprinkle of flaky sea salt before serving for extra flavor
Chicken can be marinated for up to 24 hours in the refrigerator for deeper flavor
