Ingredients
6 bone-in, skin-on chicken thighs
2 tablespoons extra virgin olive oil
4 cloves garlic, minced
1 lemon, zested and juiced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano or thyme
Fresh parsley (optional)
Instructions
Preheat oven to 425°F (220°C)
Place chicken thighs in a large oven-safe skillet or baking dish
In a small bowl, mix olive oil, garlic, lemon zest, salt, pepper, and herbs
Brush mixture over chicken skins
Squeeze fresh lemon juice over thighs and sprinkle with additional herbs if desired
Roast for 35-40 minutes, until skin is golden and juices run clear
Let rest for 5 minutes before serving
Notes
For boneless thighs: reduce roasting time to 25-30 minutes and reduce oven temperature to 400°F (200°C)
