Ingredients
1.5 lbs boneless, skinless chicken breasts
1 large red bell pepper, sliced
1 large green bell pepper, sliced
1 large yellow onion, sliced
1 1/2 cups long grain white rice
1/4 cup olive oil
2 tbsp fajita seasoning (no pork/alcohol)
2 cups chicken broth
1/4 cup chopped fresh cilantro (optional)
1 lime, cut into wedges
Instructions
Pat chicken dry and slice into strips
Heat oil in a large skillet over medium-high
Sauté onion and peppers until softened
Add chicken and cook until browned
Stir in rice, fajita seasoning, and broth
Bring to a boil, then reduce heat and simmer until rice is tender
Let rest 5 minutes before serving with lime and cilantro
Notes
Use chicken thighs for richer flavor
Substitute brown rice (add 2 1/2 cups broth, cook 25-30 minutes)
Add a lid during simmering for fluffier rice
