Description

A creamy, garlicky Caesar pasta salad with tender chicken, crisp romaine, and tangy dressing. This indulgent yet easy dish is perfect for weeknights, picnics, or potlucks.


Ingredients

12 oz bowtie pasta
2 boneless, skinless chicken breasts
1 head romaine lettuce, chopped
1 cup Caesar dressing (no alcohol or anchovies)
1 cup croutons
1/2 cup grated Parmesan (or vegan alternative)
2 cloves garlic, minced
1 lemon, juiced
1 tsp Dijon mustard
1/4 cup olive oil
Salt and pepper to taste
1 tbsp chopped fresh parsley


Instructions

Bring a large pot of salted water to a boil.
Cook bowtie pasta until al dente (8-10 minutes), then drain.
Season chicken with salt, pepper, and parsley. Grill or pan-sear until cooked through (6-7 minutes per side).
Meanwhile, whisk garlic, lemon juice, Dijon mustard, and olive oil to make a quick dressing.
Combine romaine, pasta, and chicken in a large bowl.
Pour dressing over the salad and toss to coat.
Top with croutons, Parmesan, and extra lemon juice if desired.

Notes

Use halal-certified chicken and Caesar dressing. Store leftovers in an airtight container for up to 2 days. For make-ahead meals, cook pasta separately and chill until ready to use.
