A hearty, one-pan meal combining juicy chicken thighs with a creamy, cheesy spinach mixture. Juicy, golden-baked, and packed with flavor—perfect for weeknights or cozy dinners.
Ingredients
4 bone-in, skin-on chicken thighs (or boneless)
10 oz fresh or frozen spinach
8 oz cream cheese, softened
1 cup shredded parmesan cheese
2 garlic cloves, minced
1/2 cup diced onion
2 tbsp all-purpose flour
1/2 cup milk
1 cup shredded mozzarella cheese
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
Instructions
Preheat oven to 375°F (190°C)
Place chicken thighs in a baking dish; season with salt, pepper, and half the Italian seasoning
In a pan, sauté garlic and onion until softened
Add spinach; cook until wilted, roughly 5–7 minutes
Stir in cream cheese until fully melty
Mix in flour, milk, remaining Italian seasoning, and parmesan until smooth
Spread spinach mixture over chicken thighs
Top with mozzarella cheese
Bake for 35–40 minutes until chicken is fully cooked and top is golden
Let rest 10 minutes before serving
Notes
Frozen spinach works best: thaw and drain well before use
Sub boneless thighs for quicker cooking if preferred
Add a dollop of sour cream or just a touch of paprika on top for bright flavor
Serves 4, pairs well with rice, mashed potatoes, or a green salad
Store leftovers in an airtight container in the refrigerator for 3–4 days
