Description

Fluffy baked sweet potatoes filled with smoky BBQ chicken, melted cheddar, and cool sour cream for a hearty, flavorful comfort meal.


Ingredients

Scale

2 large sweet potatoes
1 lb boneless, skinless chicken breasts (or 2 cups shredded rotisserie chicken)
1/2 cup shredded cheddar cheese
1/4 cup sour cream
2 tbsp BBQ sauce (no alcohol/meat-based additives)
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste


Instructions

Preheat oven to 400°F (200°C)
Place sweet potatoes on baking sheet, rub with oil and season with salt/pepper
Bake sweet potatoes 35-45 minutes until tender
Meanwhile, cook chicken in BBQ sauce with garlic powder and paprika until tender
Shred chicken with a fork
Scoop out centers of cooked sweet potatoes, leaving 1/2-inch shells
Stuff with BBQ chicken mixture
Sprinkle shredded cheese on top
Return to oven and bake 10 minutes until cheese melts
Serve with sour cream dollops
