Description
A flavorful Italian-inspired baked chicken dish featuring fresh tomatoes, mozzarella, and basil.
Ingredients
4 boneless, skinless chicken breasts (680 g / 1.5 lbs)
2 tablespoons olive oil (30 ml)
3 cloves garlic, minced
1 teaspoon salt (5 g)
½ teaspoon black pepper (2 g)
1 teaspoon dried oregano (2 g)
1 teaspoon Italian seasoning (2 g)
2 cups cherry tomatoes, halved (300 g)
225 g (8 oz) fresh mozzarella cheese, sliced
¼ cup fresh basil leaves, chopped (10 g)
2 tablespoons balsamic glaze (30 ml)
Instructions
Preheat oven to 200°C (400°F) and grease a baking dish.
Place chicken in the dish and pat dry.
Drizzle with olive oil and season with garlic, salt, pepper, oregano, and Italian seasoning.
Add cherry tomatoes around and over the chicken.
Bake for 20–25 minutes until fully cooked (internal temp 75°C / 165°F).
Top with mozzarella and bake an additional 5 minutes until melted.
Remove from oven, garnish with basil, and drizzle with balsamic glaze before serving.
Notes
Use fresh mozzarella for best results
Adjust seasoning to taste
Add vegetables like zucchini or spinach for variation
Serve immediately for best texture and flavor
