Ingredients
2 lbs bone-in skin-on chicken thighs
3 tbsp Dijon mustard
2 tbsp honey
2 tbsp olive oil
5 garlic cloves, minced
1 tbsp fresh rosemary, minced
1 tbsp fresh thyme, minced
1 tsp garlic powder
1 tsp onion powder
2 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper
Optional: fresh thyme sprigs, lemon slices, sliced onions, or carrots for roasting
Instructions
Preheat oven to 400°F (200°C)
Pat chicken thighs dry with paper towels and place on a wire rack
In a bowl, mix Dijon mustard, honey, olive oil, minced garlic, rosemary, thyme, lemon juice, salt, and pepper
Brush sauce evenly over chicken thighs
Sprinkle garlic powder, onion powder, and additional herbs over the thighs
Bake for 35 minutes
Flip thighs and roast for another 15-20 minutes until golden and crispy
Optional: Add onions or carrots during the final 15 minutes of cooking
Notes
Substitute whole grain mustard or maple syrup for the honey
Use boneless thighs and reduce cook time by 5-7 minutes
Add lemon slices as a fragrant garnish
