Ingredients
1 lb sirloin steak, thinly sliced
8 oz udon or soba noodles
1 red bell pepper, sliced
1 cup snap peas
1 tablespoon soy sauce (low sodium optional)
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon grated ginger
1 clove garlic, minced
1 teaspoon sesame oil
1 tablespoon cornstarch
1 tablespoon water
1 teaspoon olive oil
Salt and pepper to taste
Instructions
Bring a large skillet to medium-high heat. Add olive oil, then sear beef in batches to brown.
Add bell pepper and snap peas; stir-fry 2-3 minutes.
In a bowl, whisk soy sauce, rice vinegar, honey, ginger, and sesame oil.
Add the sauce to the skillet with beef and veggies. Cook 1-2 minutes.
Stir in noodles and water; cover skillet 2-3 minutes until noodles soften.
Mix cornstarch and water; add to skillet, stirring until thickened.
Notes
Use flank steak or chicken breast as beef substitute.
Substitute soba noodles with spaghetti if needed.
Adjust soy sauce sodium if needed.
Make sauce in advance for faster prep.
Leftovers freeze well in airtight containers.
