Ingredients
2 cups chicken breast, cut into chunks
2 cups broccoli florets (fresh or thawed frozen)
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1 cup shredded sharp cheddar cheese
1 small onion, diced
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
2 tbsp all-purpose flour
1/4 cup breadcrumbs (optional for crust)
1 tbsp olive oil
Instructions
Preheat oven to 375°F (190°C)
Heat olive oil in pan and brown chicken chunks
Cook onions and garlic until soft
Add cream of mushroom soup, sour cream, and flour
Stir in chicken, broccoli, cheddar, salt, and pepper
Transfer to baking dish
Sprinkle breadcrumbs on top
Bake for 25-30 minutes until bubbly and golden
Notes
Substitute sour cream with plain Greek yogurt for tanginess.
Use cream of chicken soup if preferred.
Freeze uncooked mixture up to 3 days before baking.
Add frozen peas or carrots if desired.
