Ingredients
1 lb ground beef (85/15 recommended)
2 cups cooked white rice (use brown rice as a whole-grain substitute)
1 cup black beans (drained and rinsed, or pinto/kidney beans)
1 cup corn kernels (fresh, frozen, or canned, drained)
2 tbsp taco seasoning
1/2 cup salsa (mild, medium, or hot)
1 cup shredded cheddar cheese
1/4 cup chopped cilantro (optional)
1/2 avocado, sliced (optional)
2 tbsp olive oil (for sautéing)
Instructions
Heat skillet over medium heat; add olive oil and brown ground beef until no pink remains.
Drain excess fat. Add taco seasoning and 1/4 cup water, stir to combine.
Mix in cooked rice, black beans, and corn, stirring well to blend flavors.
Pour in salsa and stir until everything is heated through.
Top with shredded cheese and let melt into the mixture.
Optionally garnish with cilantro and avocado slices before serving.
