3 large yellow onions, thinly sliced (600 g / 1.3 lb)
3 tablespoons olive oil (45 ml)
2 tablespoons butter (28 g)
3 cloves garlic, minced
1 teaspoon salt (5 g)
½ teaspoon black pepper (2.5 g)
1 teaspoon dried thyme (2 g)
½ teaspoon paprika (1 g)
1 cup broth (240 ml)
1 tablespoon all-purpose flour (8 g)
1 teaspoon balsamic vinegar (5 ml)
1 ½ cups mozzarella cheese (170 g)
½ cup Swiss or Gruyère-style cheese (55 g)
Fresh parsley (optional)


Instructions

Heat oil and butter, cook onions for 25–30 minutes until caramelized.

Add garlic, then flour, and cook briefly.

Stir in broth, vinegar, and seasonings; simmer until slightly thickened.

Preheat oven to 190°C (375°F).

Season chicken and place in baking dish.

Pour onion mixture over chicken.

Top with cheese.

Bake 25–30 minutes until fully cooked.

Broil briefly for a golden top if desired.

Garnish and serve.
