Juicy Mediterranean chicken thighs with cherry tomatoes, olives, and feta. A vibrant, flavorful one-pan meal ready in under 45 minutes.
Ingredients
6 bone-in, skin-on chicken thighs
1/2 cup cherry tomatoes, halved
2 cloves garlic
1 tablespoon oregano
1 lemon (zested and juiced)
2 tablespoons olive oil
1/2 cup Kalamata olives, pitted
1/2 cup crumbled feta cheese
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Pat chicken dry; season with salt and pepper
Mix garlic, oregano, lemon zest, olive oil, salt, and pepper
Rub mixture under skin and on skin of chicken
Roast at 400°F (200°C) for 35 minutes
Add tomatoes and olives halfway through cooking
Sprinkle feta during last 10 minutes
Let rest 10 minutes before serving
Notes
Use boneless thighs (reduce cook time by 10 minutes)
Substitute olives with green olives or fat-free feta
Add 1 tbsp lemon juice to resting chicken for extra moisture
