Description

Tender chicken in a sticky-sweet garlic glaze served over fluffy rice with crisp broccoli. A quick, budget-friendly meal perfect for weeknights or meal prep.


Ingredients

2 boneless, skinless chicken breasts (sliced into strips)
2 cups cooked white or brown rice (or cauliflower rice)
1/3 cup honey
2 tbsp soy sauce (or tamari for gluten-free)
3 garlic cloves (minced)
1 tsp sesame oil
2 cups broccoli florets
1/2 tsp ginger (grated, optional)
1 tsp cornstarch (to thicken sauce)
1 tbsp water


Instructions

Heat oil in a pan over medium heat
Add chicken and cook 5-6 minutes until golden
Stir in honey, soy sauce, garlic, and ginger
Simmer 2 minutes, then mix in cornstarch and water
Cook 2 minutes until sauce thickens
Add broccoli and sauté 3-4 minutes until tender-crisp
