Description

Imagine tender beef and golden potatoes simmered in a rich garlic butter sauce, perfect for any cozy meal. This one-pan dish combines fresh garlic, herbs, and a savory beef broth for a simple, flavorful family dinner that feels indulgent. Great for weeknights or gatherings, it’s hearty, budget-friendly, and adaptable.

Ingredients

Scale

1.5 lbs beef sirloin or stew beef, cut into bite-size pieces
1.5 lbs baby potatoes, halved (or Yukon Gold, quartered)
5 cloves fresh garlic, minced
4 tbsp unsalted butter
2 tbsp olive oil
1/2 cup beef broth (or vegetable broth)
1 tsp dried rosemary
1 tsp dried thyme
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
Salt, to taste
Black pepper, to taste

Instructions

Preheat oven to 375°F (190°C)
Heat olive oil in a large oven-safe skillet over medium-high heat
Add beef pieces and sear until browned on all sides
Add minced garlic, rosemary, thyme, garlic powder, onion powder, and smoked paprika; cook for 30 seconds
Stir in butter until melted, then pour in beef broth and season with salt and pepper
Add potatoes, mix gently, and transfer to oven
Bake for 30-40 minutes until beef is tender and potatoes are golden

Notes

Use chuck roast as a budget-friendly alternative to sirloin. Fresh herbs can be substituted (1 tbsp fresh = 1 tsp dried). Store leftovers in an airtight container for up to 3 days. Serve with crusty bread or a side salad for balance.
