Ingredients
2 lbs boneless, skinless chicken thighs
1 (10 oz) package fresh spinach
3 cloves garlic, minced
1 cup cream cheese, softened
2 cups shredded mozzarella cheese
1 small shallot, finely chopped
1 cup sliced mushrooms
1 tsp dried thyme
1/4 tsp black pepper to taste
1/2 cup all-purpose flour (for breading, optional)
1 cup shredded Parmesan cheese
1/4 cup milk (for sauce consistency)
Instructions
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Place chicken thighs in the dish, season with black pepper, and top with torn spinach and mushrooms.
In a small bowl, mix cream cheese, Parmesan, garlic, shallot, and thyme until smooth.
Spread the cheese sauce evenly over the chicken and spinach mixture.
Sprinkle mozzarella on top for a cheesy finish.
Bake uncovered for 25-30 minutes, until the top is golden and the chicken reaches 165°F (74°C).
Notes
Use pre-shredded mozzarella for convenience
Fresh spinach can be replaced with thawed, drained frozen spinach
