Ingredients
2 lbs boneless, skinless chicken breasts
2 tablespoons olive oil or butter
2 cloves garlic, minced
1/2 cup all-purpose flour
1 cup milk or non-dairy milk (unsweetened)
8 oz cream cheese, softened
1/4 cup ranch seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped green onions or fresh chives
1 cup button mushrooms, sliced (optional)
Instructions
Pat chicken breasts dry with paper towels
Heat oil or butter in a large skillet over medium-high heat
Sear chicken for 3-4 minutes per side until golden; remove and set aside
In the same pan, sauté garlic for 30 seconds
Whisk in flour to create a roux, then gradually add milk while stirring
Stir in softened cream cheese until melted
Add ranch seasoning, salt, and pepper
Return chicken to the pan, cover, and simmer 10-12 minutes until fully cooked
Garnish with green onions and serve with optional mushrooms on top
