Ingredients
1 lb ground beef (85/15)
1.5 cups long-grain white rice (uncooked)
1 medium onion (diced)
3 cloves garlic (minced)
2 cups beef broth
1 cup cream of mushroom soup (no alcohol)
1 1/2 cups shredded cheddar cheese
1 tsp chili powder
1 tsp ground cumin
1 tsp paprika
1 tsp onion powder
Salt and pepper
Instructions
Heat skillet over medium heat; brown ground beef until browned, 8-10 minutes
Add onion and garlic; sauté 2 minutes
Pour in rice, beef broth, soup, chili powder, cumin, paprika, onion powder, salt, and pepper
Mix well and bring to boil
Reduce heat, cover, and simmer 15 minutes
Uncover, sprinkle cheese, and cook 3-5 minutes until hearth rise forms
Let rest 5 minutes before serving
Notes
Use lean ground beef or ground turkey for a lighter version
Optional toppings: sautéed peppers, frozen corn, or steamed broccoli
