Ingredients
1.5 lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
1 cup shredded sharp cheddar cheese
1 cup uncooked long-grain white rice (or brown rice)
2 cups chicken broth (low-sodium)
10.5 oz canned condensed cream of mushroom soup
1/2 cup milk (whole or 2%)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup diced green bell pepper
1/2 cup diced carrots
1/4 cup finely chopped pimentos (optional)
Instructions
Preheat oven to 375°F (190°C)
In a large bowl, combine chicken, rice, broth, soup, milk, garlic powder, onion powder, salt, and pepper
Transfer mixture to a greased 9×13-inch baking dish
Top evenly with shredded cheddar cheese
Bake for 30-35 minutes until bubbly and golden
