Ingredients

2 boneless chicken breasts (or 1 rotisserie chicken)
2 cups cooked white rice
1 cup shredded cheddar cheese
1/3 cup buffalo hot sauce
1/2 cup mayonnaise
1/2 cup milk
2 tbsp all-purpose flour
2 tbsp butter (for the roux)
1/2 cup shredded carrots and/or celery
2 tbsp chopped green onions


Instructions

Cook rice according to package instructions
Sauté chicken breasts until fully cooked, then shred or dice
In a pan, melt butter and whisk in flour to make a roux
Gradually stir in buffalo sauce, mayonnaise, and milk until thickened
Combine rice, cooked chicken, and sauce mixture
Spread into a baking dish
Top with cheddar cheese
Bake at 375°F (190°C) for 20-25 minutes until golden
