Ingredients
1 lb ground beef (85% lean)
12 oz rotini pasta
2 cups sliced cremini mushrooms
10.5 oz can cream of mushroom soup
1 cup beef broth
½ cup sour cream
1 small diced onion
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
Optional: ½ cup shredded cheddar cheese, 1 cup frozen peas or spinach, 2 tbsp breadcrumbs (vegetarian) for topping
Instructions
Preheat oven to 375°F (190°C)
Cook rotini pasta according to package instructions, drain
Brown ground beef in a skillet with onion, garlic powder, and pepper
Add sliced mushrooms to beef mixture, sauté until tender
Stir in cream of mushroom soup, beef broth, and sour cream until combined
