Ingredients
1 lb boneless, skinless chicken breasts or thighs, diced
2 cups cooked white rice (day-old preferred)
1 medium onion, diced
1 medium red bell pepper, diced
1 cup frozen corn, thawed
1 can black beans (15 oz), drained and rinsed
1/2 cup tomato-based BBQ sauce (non-alcoholic)
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp chili powder (optional for heat)
2 cloves garlic, minced
Salt and pepper to taste
Instructions
Heat 1 tbsp oil in a large skillet
Cook chicken over medium heat until browned
Add diced onion and bell pepper, sauté for 3-4 minutes
Cook garlic with spices (paprika, cumin, chili powder) for 1 minute
Add BBQ sauce and stir to coat
Reduce heat, mix in rice, cover, and let simmer 5-7 minutes
Stir in corn and black beans
Simmer uncovered for 5 minutes
Top with shredded cheddar cheese
