Ingredients
2 lbs boneless skinless chicken breasts
1 cup fresh white or cremini mushrooms, sliced
1 cup Colby-Jack cheese, shredded
1/2 cup mayonnaise
1/4 cup Dijon mustard
1/4 cup honey
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
Instructions
Pat chicken dry and season both sides with garlic powder, onion powder, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Cook chicken for 4-5 minutes per side until golden and almost cooked through.
Sprinkle mushrooms over chicken, then top with shredded cheese. Allow cheese to melt and bubble.
In a small bowl, whisk mayonnaise, Dijon mustard, and honey to create the honey mustard sauce. Drizzle over the cheese layer.
