Description

A stress-free, richly flavorful Chicken Alfredo made effortlessly in a slow cooker. Tender chicken thighs are simmered in a garlic-herb-laced, velvety Parmesan cream sauce and served with fettuccine (or zucchini noodles) for a luxurious family-friendly meal without pork or alcohol.

Ingredients

Scale

4 boneless, skinless chicken thighs
8 oz fettuccine or alternative pasta
1.5 cups heavy cream
1 cup grated Parmesan cheese
4 garlic cloves, minced
1 tbsp olive oil
1 tsp salt
0.5 tsp black pepper
1 tsp dried parsley
1 tsp dried basil

Instructions

Place chicken thighs in crockpot
Add heavy cream, minced garlic, salt, pepper, parsley, and basil
Pour in olive oil
Cover and cook on low for 6-8 hours or high for 3-4 hours
Once chicken is tender, shred with two forks
Add cooked fettuccine to the crockpot and stir until evenly coated
Serve immediately

Notes

Use chicken thighs for extra juiciness
Pasta can be swapped with zucchini noodles for low-carb
Leftovers refrigerate well for 3-4 days
Serve with steamed broccoli or bread for a complete meal
