Ingredients

1.5 lbs boneless chicken breasts (or 1.5 lbs thighs)
1 cup uncooked long grain white rice
2 cups mixed bell peppers (red, green, yellow), sliced
1 large onion, diced
2 cups low-sodium chicken broth
1 cup milk (optional, for creamier texture)
2 tbsp fajita seasoning
1 tsp ground cumin
1 tsp smoked paprika
1 1/2 cups shredded cheddar cheese
1/4 tsp salt (adjust to taste)


Instructions

Preheat oven to 375°F (190°C)
Sauté onion and bell peppers in a pan until softened
Grill/sauté chicken strips with fajita seasoning until nearly cooked
Combine rice, broth, milk, cumin, paprika, and salt in a casserole dish
