Description
A one-pan comfort food masterpiece with tender ground beef, smoky black beans, sweet corn, and melty cheese, all soaking in a rich sauce. Ready in 30 minutes with minimal cleanup.
Ingredients
1 lb lean ground beef (90/10)
1 cup drained black beans
1 cup drained sweet corn
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 cup enchilada sauce (mild or red)
1/2 cup tortilla strips or crushed tortilla chips
1 onion, chopped
1 clove garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
Pepper to taste
Instructions
Preheat oven to 375°F (190°C)
Sauté onion and garlic in a large skillet over medium heat until translucent
Add ground beef, cumin, chili powder, salt, and pepper. Cook until beef is browned and fragrant
Add black beans, corn, and enchilada sauce. Stir to combine
Bring mixture to a simmer and let thicken slightly
Sprinkle cheddar and mozzarella cheese over the top
Add tortilla strips on top of the cheese
Transfer skillet to oven and bake for 15–20 minutes until cheese is bubbly and golden
Let sit 5 minutes before serving
Notes
Use ground turkey or plant-based beef crumbles for substitute
For extra flavor, add diced green chiles with the beans
Store leftovers in an airtight container in refrigerator for 3–4 days
