Description
A rich, velvety pasta dish with tender chicken, sun-dried tomatoes, and a vibrant cream sauce. This Italian-inspired comfort food is quick to make and packed with bold, rustic flavors perfect for any occasion.
Ingredients
1 1/2 lbs chicken breast, cubed
1 tbsp olive oil
1 cup chopped onion
3 garlic cloves
1 cup chopped sun-dried tomatoes (oil-packed)
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
2 cups heavy cream
1/2 cup grated Parmesan cheese
12 oz rotini or penne pasta
1 tbsp unsalted butter
Optional: Fresh basil for garnish
Instructions
Bring a large pot of salted water to a boil. Cook rotini according to package instructions until al dente. Reserve 1 cup pasta water, then drain.
Heat olive oil, butter, and garlic in a large skillet over medium heat until fragrant.
Add chicken cubes and sauté for 4-5 minutes until browned and nearly cooked through. Remove chicken and set aside.
In the same skillet, add onion and sauté until softened (3-4 minutes). Stir in sun-dried tomatoes, Italian seasoning, salt, and pepper. Cook for 2 minutes to deepen flavor.
Return chicken to the skillet. Pour in heavy cream and Parmesan cheese. Simmer for 5 minutes until sauce thickens slightly.
Toss cooked pasta into the skillet and stir to coat with sauce. Add 1/2 cup reserved pasta water to create a loose, creamy consistency.
Season to taste and garnish with fresh basil before serving.
