A tender and flavorful baked chicken dish infused with a rich balsamic glaze, perfect for weeknight dinners or special occasions.
Ingredients
4 boneless, skinless chicken breasts (680–800 g / 1.5–1.75 lbs)
60 ml (1/4 cup) balsamic vinegar
45 ml (3 tablespoons) olive oil
3 cloves garlic, minced
15 ml (1 tablespoon) honey
5 g (1 teaspoon) dried oregano
5 g (1 teaspoon) dried basil
2 g (1/2 teaspoon) black pepper
5 g (1 teaspoon) salt
120 g (1 cup) cherry tomatoes, halved
50 g (1/2 cup) sliced red onion
Fresh parsley (optional)
Instructions
Preheat oven to 200°C (400°F).
Whisk together balsamic vinegar, olive oil, garlic, honey, oregano, basil, salt, and pepper.
Place chicken in a baking dish and coat with marinade.
Add cherry tomatoes and sliced onion around the chicken.
Bake for 20–25 minutes until internal temperature reaches 75°C (165°F).
Let rest for 5 minutes before serving.
