Ingredients
2 pounds bone-in, skin-on chicken thighs (or boneless, skinless thighs or breasts)
2 tablespoons olive oil or avocado oil
5–6 cloves fresh garlic (or 1 ½ teaspoons garlic powder)
½ cup pure honey
⅓ cup reduced-sodium soy sauce
1 tablespoon rice vinegar (or apple cider vinegar)
1 teaspoon freshly grated ginger (or ½ teaspoon ground ginger)
Freshly ground black pepper, to taste
Optional: broccoli florets or sliced bell peppers
Instructions
Preheat oven to 400°F (200°C)
Pat chicken dry and place in a baking dish
Brush chicken with oil
In a bowl, whisk honey, soy sauce, vinegar, ginger, and pepper
Mince garlic and spread over chicken before pouring sauce
Bake for 35-40 minutes, rotating halfway for even browning
