Ingredients
4 boneless, skinless chicken breasts (6–8 oz each)
1 cup flour (all-purpose or gluten-free)
1 cup breadcrumbs (regular or gluten-free panko)
1/2 tsp garlic powder
1/2 tsp black pepper
1 packet dry ranch seasoning (or 1 tsp homemade blend)
1/2 cup grated Parmesan
1/4 cup crushed cornflakes (optional gluten-free alternative)
Olive oil spray (for dish)
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
In separate bowls, layer flour, then breadcrumbs mixed with garlic powder, pepper, ranch seasoning, and Parmesan
Lightly season chicken breasts with salt
Dredge chicken in flour, then seasoned breadcrumb mixture, pressing gently to adhere
Place on baking sheet and lightly spray with olive oil
Bake 22-25 minutes until golden and internal temperature reaches 165°F
Let rest 5 minutes before serving
Notes
For crisper results, bake on a wire rack
Chicken thighs work well if breasts are unavailable
Add 1/4 tsp smoked paprika for extra depth
